Built on Speciality Breads’ Round Ciabatta Rolls, this over-the-top breakfast sandwich is a trending menu concept that’s turning heads. Layered with pork sausages, beechwood smoked streaky bacon, golden hash browns, melty cheese, fresh tomato and avocado, it’s got everything today’s diner wants, comfort, indulgence, and big brunch energy. Perfect for grab-and-go, weekend specials or all-day breakfasts, this is a build that delivers on flavour, visual impact, and profit.


METHOD

  1. Cook the sausages. Deep fry three sausages for 4 minutes, or until they reach a core temperature of 72°C.

  2. Cook the hash browns. Deep fry two hash

    browns at the same time as the sausages.

  3. Warm the bacon. Heat three slices of streaky bacon in the oven, pan, or under a grill until hot and lightly crisp.

  4. Warm the ciabatta. Place the ciabatta in the oven for 2–3 minutes, then slice in half.

  5. Assemble the sandwich. Layer the avocado, tomato slices, and a cheese slice on the bottom half of the bun. Add the sausages, followed by another cheese slice. Finish with the hash browns and bacon rashers.

  6. Serve.
