Korean Chicken Loaded Fries, Street Food Style

Bring bold, street food-inspired flavour to your menu with Korean Chicken Loaded Fries—a crave-worthy dish that embraces the Big Fusion, No Rules trend. Featuring crispy Chefs’ Selections Battered Chicken Bites tossed in a sticky, Korean-style glaze made with gochujang paste, Chefs’ Selections honey, soy sauce, rice wine vinegar and lime juice. The result? A perfect balance of sweet heat, crunch, and tang that’s bang on trend and built to impress.
METHOD
1. Prepare the Korean Sauce:
• Combine all sauce ingredients in a saucepan.
• Simmer over medium heat, stirring frequently, until the sauce thickens. Set aside.
2. Cook the Chicken & Fries:
• Deep fry 8 chicken fillet bites at 180°C for 5–6 minutes, until golden and cooked through.
• Deep fry fries at 180°C for 3–4 minutes until crispy.
3. Assemble the Loaded Fries:
• Toss the cooked chicken bites in 2 tbsp of the Korean sauce.
• Place fries in a serving bowl.
• Top with saucy chicken bites.
• Garnish with pickled red onions, pickled chilli's, chopped spring onions, and a sprinkle of black and white sesame seeds.

Chefs’ Selections 12mm Fries (Code 18531)
2 tbsp Korean sauce (see below)
Pickled red onions
Pickled red chilli's
Chopped spring onions
Black and white sesame seeds
For the Korean Sauce:
50g Gochujang Korean paste 350g
Chefs’ Selections honey (Code 78200)
50ml Soy sauce
50ml Rice wine vinegar
50ml Lime juice
